Coffee goes flat for two reasons and a normal jar solves neither. Oxygen strips the aromatic oils within days of grinding, and light does the same more slowly. A clip-top glass jar is airtight but transparent; a bag rolled over on itself is neither. This canister addresses both: the steel body keeps light out entirely, and the lid has a small pump built into it, so pressing the top draws the air out of the headspace instead of trapping it in with the beans. The practical difference shows up around day five, which is when a bag of ground coffee normally starts tasting like paper. The mouth is wide enough for a scoop, the seal is a proper gasket rather than a friction fit, and it works just as well for tea, flour or sugar — anything that stales or takes on damp.
