A crimped edge is what keeps a dumpling shut in boiling water or hot oil, and getting one by hand means pleating dough with your fingers, wrapper after wrapper, with the shape drifting a little each time. This set separates the two jobs that make that hard. The round cutter presses a consistent circle from rolled dough, so every wrapper starts the same size instead of whatever shape a knife happened to leave. The hinged mould then does the folding: lay the wrapper across it, spoon in a moderate amount of filling, and close the two halves together. The hinge keeps the fold aligned while the ridged edge presses a even crimp along the seam in one motion, which is the part that actually seals the filling in. Overfilling is the one thing that defeats it, since too much filling stops the edges meeting cleanly, so a modest spoonful works better than a generous one. The mould and cutter are both stainless steel, which holds its shape under repeated pressing and rinses clean of flour and raw filling without staining. The same two pieces cut and fold potstickers, empanadas and small hand pies, not just dumplings. Wash before first use, and dry both pieces thoroughly afterward.
