Cutting a proper sourdough with an ordinary bread knife is a fight. The crust is hard enough that you press, the blade flexes, and the moment it breaks through, that pressure crushes the open crumb underneath — so a good loaf ends up as squashed wedges. A bow knife works the way a coping saw does: the blade is thin and held under tension by the frame, so it does not flex at all.
