A hand-shaped patty is never really even: fingers press harder at the centre than the edge, so the middle cooks through while the rim dries out or burns before it does. A press solves this by loading the meat from one flat plane instead of many uneven ones, spreading the same downward force across the whole surface so the patty comes out the same thickness edge to edge, which is what lets it cook at the same rate all the way across. The plate is stainless steel, chosen because it does not pit, rust or warp under repeated pressing and washing the way a thinner or coated metal can over time, and its smooth finish is what allows the formed patty to lift straight off without tearing or leaving meat behind, cutting down on both mess and cleanup. The raised bridge handle sits well above the plate, which keeps knuckles clear of the meat and off the counter, and puts the wrist in a straighter, less strained position than pressing down with a flat hand. Because the mechanism is just even, flat pressure, it works on more than beef: vegetable cakes, rice patties and breakfast sandwich rounds all take the same shape.
