Plastic lolly moulds have two failure modes. They pick up the smell of the freezer and pass it into whatever you make, and they are poor conductors, so a tray of fruit puree takes most of a day to set solid. Steel fixes both. It is inert, so a raspberry lolly tastes of raspberry and nothing else, and it pulls heat out of the mixture far quicker - a batch that would take eight hours in silicone is usually solid in four. The moulds are tapered and sit in an open wire rack that holds them level and upright, which sounds trivial until you have tipped a full tray of juice over the freezer shelf. Each mould takes a wooden stick through a small cap that keeps it centred while the mixture sets. Getting them out is a matter of running the mould under warm tap water for a few seconds - the outer skin releases and the lolly slides free whole. The whole set washes up like cutlery and lasts for years, which is the real argument against the box of disposable sleeves.

Metal conducts heat out of the mixture; silicone insulates it. In practice that is a batch ready the same afternoon instead of the next morning.

Steel is inert. Plastic moulds absorb odours from the freezer and hand them straight back to whatever you froze in them.

Open wire, so cold air reaches every side, and it holds the moulds upright while the mixture is still liquid. That is when spills happen.
